Chef Wendell: After School Tacos

Ingredients:

  • 1 tbs. olive oil
  • 3 cups finely chopped onions (about 3 medium onions)
  • 6 garlic cloves, minced
  • 1 tbs. ground flax seed
  • 1 jalapeno chile, minced (seeds and ribs removed for less heat, if desired)
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 2 pounds lean ground turkey breast (Read the labels)
  • 1 can (28 ounces) crushed tomatoes
  • Sea salt
  • Heat oil in a large skillet over medium-high heat. Add onions; cook until softened, about 5 minutes. Add garlic, jalapeno, chili powder, cumin, and coriander; cook, stirring, 1 minute.
  • Corn Taco Shells (Read labels to avoid trans-fats and MSG)
  • Thinly slivered lettuce
  • Diced tomatoes
  • Shredded Soy Cheese

Directions

1. In the vegetable oil, sauté the jalapeno, onion, garlic and spices over medium low heat.
2. Add turkey; cook, breaking up meat with a wooden spoon, until no longer pink, about 5 minutes. Stir in tomatoes; cook, stirring occasionally, until liquid has evaporated, 10 to 12 minutes. Season with salt
3. Hold the taco shell in your palm then spoon 2 tablespoons of filling on the bottom.
4. Then add shredded cheese, lettuce and tomatoes
5. Enjoy

Serving Suggestions:
Also makes a great pasta sauce
Toss meat into a garden salad, break up some taco chops and, voila, a taco salad.
