Ellison Cookie Contest Finalist #1

The last of 3 finalist Ellison Cookie contest finalist shares her recipe for Spitzbuben Cookies.

Spitzbuben

Ingredients:

            1 cup sugar

            1 cup butter

            2 eggs

            1 teaspoon vanilla

            2 cups flour

            1 cup raspberry jam

 

Directions:

Cream butter and sugar until fluffy

            Add yolks and vanilla.  Add flour.

            Reserve 1/3 of the dough and chill for 30 minutes.

            Spread remaining dough into 13X9 ungreased pan and

spread jam on top of dough.

When reserved dough is chilled and can be rolled out, roll into a 13x9 rectangle and cut into strips.

            Place strips onto jam in a diamond pattern.

Bake at 350°F for 25 minutes, cool and cut into squares.
