5 Recipes Kids will Love

Recipes for Healthy Kids

Healthy Mini- Macs

Makes 12 mini-servings

Ingredients:

1 (14.5-oz) box Barilla Plus (multi-grain) Elbow Pasta

¼ cup King Arthur White Whole Wheat Flour

2 cups Silk Unsweetened Soymilk

3 cups Meijer Reduced Fat Shredded Cheddar Cheese

1 cup frozen Meijer peas, thawed

1 tsp. Paprika

1/2 cup Panko Italian Seasoned Breadcrumbs

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Directions:

  1. Preheat oven to 435 degrees F.  Coat a 12- cup muffin tin with nonstick cooking spray.  
  2. Cook the pasta according to package directions; drain but do not rinse.
  3. Combine the flour and 1/4 cup of the milk in a saucepan (off the heat) pan and whisk until smooth. Stir in the remaining milk and cook over medium heat, whisking constantly, until the mixture is about the thickness of heavy cream, about 7 minutes.
  4. Add the peas and paprika; remove from heat and stir in the cheese until the sauce is smooth. Add pasta to cheese sauce and toss to coat.  Season to taste with salt and pepper.  
  5. Using an ice cream scooper, scoop Mac and Cheese into muffin cups. 
  6. Combine breadcrumbs and grated Parmesan; sprinkle over the macaroni and cheese.
  7. Cook in oven for about 10 minutes or until tops are golden.  Let sit 5 minutes. 
  8. Carefully loosen mini Mac and Cheeses from muffin cups and serve.

Flower Power Eggs

Serves 4 (1 bell pepper makes 4 rings)

              

Ingredients:

 

1 bell pepper (or mix and match red, green, and orange)

4 eggs

Salt and pepper to taste

 

Directions:

1.      Cut off the stem of one bell pepper and scrape out the insides.  Cut peppers into thick rings (thick enough to keep egg inside pepper while cooking. 

2.     Heat oil in a large skillet.  Place pepper rings in skillet and crack an egg into each ring.  Cover skillet and cook until eggs are cooked through or cooked to your liking. 

3.     Serve with a piece of toast for a fun, healthy meal.

Apple Nachos

Serves 4

 

Ingredients:

 

2 Honey crisp apples

1 tsp. lemon juice

4 tbsp. Meijer Organics Creamy Peanut Butter

¼ cup sliced almonds

¼ cup flaked unsweetened coconut

¼ cup dark chocolate chips

 

Directions:

 

1.      Cut apples into thin slices.  Coat apples in lemon juice to prevent browning.  

2.     Melt peanut butter slightly in a small saucepan and drizzle over apples.  Sprinkle apples with flaked coconut, almonds, and chocolate chips. 

3.     Eat with your hands like real nachos.

No-Bake Granola Muffins

Makes 12 Muffins

 

Ingredients:

 

2 overripe bananas

2 tbsp. Meijer Organics Pure Maple Syrup

2 tbsp. Meijer Naturals Peanut Butter

2 tsp. cocoa powder (optional)

1 cup Meijer Naturals Rolled Oats

1/2 cup Bare Naked Vanilla Almond Granola

2 tbsp. semi-sweet chocolate chips

2 tbsp. dried cherries

 

Directions:

1.     Line a muffin pan with paper liners. 

2.    Mash the bananas in a large mixing bowl.  Add syrup, peanut butter, and cocoa powder, if using and mix well. 

3.    Add all other ingredients; mix well then press into prepared muffin tins. 

4.    Freeze at least 60 minutes before serving.

5.    Store in the refrigerator.

Banana Peanut Butter Ice Cream

Makes 2 Servings

 

Ingredients:

4 frozen bananas, sliced

2 tbsp. Meijer Natural Peanut Butter

Toppings:

Meijer Dark Chocolate Chips

Toasted coconut

            

Directions:

 

1.     In a food processor blend sliced bananas until creamy.  Add in 2 tbsp. peanut butter and mix well.

2.    Top with your favorite toppings and enjoy!
