Chef Matt Schwartz from Crystal FS cooks up a Bacon Wrapped Pork Tenderloin with Raspberry Chipotle Sauce.
Bacon Wrapped Pork Tenderloin
2-1 1/2 Pork Tenderloin
16-20 slices of apple wood smoked bacon
Wrap pork tenderloin in bacon. Place on roasting racks. Roast in convection over at 350 F for approximately 20 minutes or an internal temperature of 165 is reached. Conventional over-roast at 375 F for approximately 30 minutes or until an internal temp of 165 F is reached.
2 c minced onion
2 T minced garlic
2 c ketchup
1/2 can pureed chipotle
1/2 c Worcestershire sauce
1/4 c brown sugar
1/4 c cider vinegar
1/4 c lemon juice
2 t dijon mustard
2 t kosher salt
2 c raspberry jam
1. saute onions and garlic
2. Combine all ingredients except for raspberry jam and simmer for 10-15 minutes or until proper consistency.
3. Add raspberry jam and mix well. Serve or refrigerate.
