Chef Nikki makes one of her husbands favorites, "Slammin' Salmon with Mango Salsa".  Nikki's husband happens to be Pacer Assistant Coach Brian Shaw. Brian even stopped by this morning to talk about healthy eating and pro ball.

Childhood obesity is on the rise and it's essential that we teach kids good eating habits early.  Chef Nikki and Coach Brian also share a few tips and tricks for keeping your family healthy, starting in the kitchen.

SLAMMIN’ SALMON WITH MANGO SALSA
By Chef Nikki Shaw

4  6-ounce salmon fillets
1  lemon
1 tablespoon olive oil
1 teaspoon Old Bay or Salmon Magic seasoning
1  cup mango, peeled and diced
¼  cup red onion, finely chopped
2 tablespoons jalapeno, seeded and chopped
½  cup fresh cilantro, chopped
2 tablespoons lime juice
2 tablespoons honey

1. Preheat oven to broil.  Place salmon on a baking sheet, lined with foil (for an easy clean up).  Squeeze lemon juice then brush olive oil over fillets.  Sprinkle seasoning on each fillet.
