Circle City Go Girls & Healthy Meal Choices

Michael Sahm, Sahm’s and Julie Patterson, Circle City Go Girls offer up examples of healthy meal choices for marathon running.

City Go Girls Omelette
Ingredients
4-60z Egg Beaters or Egg whites
4 slices avocados
2oz. chopped bell peppers
20z. fresh spinach
20z. chopped roma tomatoes
Fresh basil
Fresh cilantro
2oz. Feta cheese
Olive oil

Instructions
Coat 8 inch non-stick skillet with olive oil and heat.  Add peppers, fresh spinach, and tomatoes then sauté until slightly tender.  Add egg beaters and fresh herbs.  Pull back edges of omelette with a rubber spatula until omelette forms and then gently flip the omelette.  Cook until eggs are not runny then add feta cheese, avocado slices and fold in half and transfer onto serving dish.

Fresh Berry Salad with Mixed Greens and Berry and Balsamic Vinaigrette

Ingredients
1 T Blackberry Preserves
1 T Red Raspberry Preserves
1 ½ T Extra Virgin Olive Oil
1 T Dijon Mustard
1 T Balsamic Vinegar
1 T Red Wine Vinegar
Red raspberries
Blueberries
Strawberries
Feta Cheese (or gorgonzola cheese)
Roasted Walnuts
Mixed green and romaine lettuce

Instructions
In a mixing bowl, add red raspberry and blackberry preserves, olive oil, Dijon mustard, balsamic and red wine vinegar and wisk.  Add mixed greens and romaine and mix in bowl with the vinaigrette.  Transfer onto serving dish then garnish with all of the fresh berries, feta cheese and roasted walnuts.  Add grilled or sautéed chicken breast if desired.
