Ellison Cookie Contest Finalist #1

Denise Crane, Ellison Cookie Contest Finalist creates her Lemon Pistachio Star Cookies! It's a recipe that she used to make with her mother when she was a little girl.

Lemon Pistachio Star Cookies

Ingredients:

1 star shaped cutter

3 cups all purpose flour

1 cup powdered icing sugar

½ cup ground pistachios (or ground almonds if you prefer)

½ tsp vanilla flavoring

1 large egg

½ cup butter

Approx ¼ cup of water

8 tbsps lemon curd

Pistachio nuts for decoration

 

Directions: Place the flour, icing sugar and ground pistachios in a bowl

Rub in the butter until the mixture resembles fine breadcrumbs

Stir in vanilla flavoring, egg, and enough water to mix to smooth dough

Wrap up dough and chill for 30 minutes

Preheat oven to 350°F

Roll out the dough to about ½ inch in thickness and cut out the stars

Place on baking tray and chill for 15 mintues

Cook for 8 minutes. Cool

Sandwich together pairs of stars with lemon curd

Then dust with icing sugar and place a single pistachio nut on top of each one.
