Great American SPAM Champ!

Samantha Stephens, Great American SPAM Championship – Kid Chef from McCordsville, wins 1st Place, 2012 Indiana State Fair.

SPAMizza Hors D’oeuvres

1 (12 ounce) can SPAM Lite, chopped in blender

15 unsalted saltine crackers, crushed

1 egg

1 tablespoon flaked onions

1/4 teaspoon pepper

1/4 teaspoon basil

1/2 cup olive oil

1 (14 ounce) jar prepared pizza sauce

1 (6 ounce) block mozzarella cheese, small cubes

Mix SPAM with crushed unsalted crackers, egg, onion flakes, pepper and basil in large bowl. Shape mixture into small balls. Pour olive oil in frying pan and brown SPAM balls on all sides. Remove SPAM balls from pan to dish and cool to touch. Remove olive oil from pan. Cut slit in SPAM balls and place small cube of mozzarella cheese in the pocket. Return SPAM balls to pan and add pizza sauce and heat for 10 minutes on low heat setting. Place SPAM balls on plate and cover with pizza sauce.
