Sweet Potato Veggie Burgers
Makes 7-8 large patties
 

Ingredients:


2 cans cannellini white beans, drained
1 large sweet potato, baked/peeled/mashed (about 2 cups)

2 tbsp. Panko breadcrumbs

Salt and pepper to taste
2 tbsp. tahini
2 tsp maple or agave syrup
1 tsp lemon pepper seasoning OR Cajun seasoning
1/4 cup wheat flour
1 tbsp. Canola oil

Toppings: avocado, Dijon mustard, romaine lettuce, tomoato, onion

Directions:

 

1.      Add drained beans and potatoes to mixing bowl. Mash beans and potato together.

2.     Add remaining ingredients and mix well.  Form patties out of sweet potato mixture.  

3.     Heat canola oil in a pan over medium- high heat.  Cook sweet potato patties for 2-3 minutes per side or until nicely browned. 

4.      Serve on toasted pretzel bun with your favorite toppings. 

 

Strawberry Rhubarb Baked Oatmeal

Serves 12

Ingredients:

 

2 cups diced rhubarb

3 cups diced strawberries

2 large eggs

1/4 cup applesauce

1/4 cup Extra Virgin Coconut Oil, melted

1/2 cup sugar

1 1/2 cups almond milk

3 cups rolled oats

1/2 cup wheat flour

2 tsp. baking powder

1 tsp. salt                     

1/4 cup brown sugar, for sprinkling

 

Directions:

 

1.     Preheat the oven to 350. Spray a 9×13 baking dish.

2.     Toss the rhubarb and strawberries in the baking dish.

3.     In a mixing bowl, whisk together the remaining ingredients, except the brown sugar.  Pour the batter over top of the fruit and stir gently to combine the fruit.

4.     Sprinkle the brown sugar over the top.

5.     Bake in the preheated oven for 25 to 30 minutes, or until toothpick comes out clean in the middle.

6.     Serve Strawberry Rhubarb Baked Oatmeal with milk, cream, yogurt (or even with ice cream as a dessert!).

 

Asparagus Gruyere Tart

Serves 6

Ingredients:

Flour, for work surface

1 sheet frozen puff pastry

2 cups Gruyere cheese, shredded

1 1/2 pounds medium or thick asparagus

1 tbsp. Meijer Extra Virgin Olive Oil

Salt and pepper

 

Directions:

  1. Preheat oven to 400 degrees.
  2. On a floured surface, roll the puff pastry into a 16-by-10-inch rectangle. Trim uneven edges. Place pastry on a baking sheet. With a sharp knife, lightly score pastry dough 1 inch in from the edges to mark a rectangle. Using a fork, pierce dough inside the markings at 1/2-inch intervals. Bake until golden, about 15 minutes.
  3. Remove pastry shell from oven, and sprinkle with Gruyere. Trim the bottoms of the asparagus spears to fit crosswise inside the tart shell; arrange in a single layer over Gruyere, alternating ends and tips.
  4. Brush with oil, and season with salt and pepper. Bake until spears are tender, 20 to 25 minutes.
