Indy Winter Farmers Market Roasted Squash Soup

The Indianapolis Winter Farmers Market provides a venue for directly connecting farmers and producers to Indianapolis area residents & visitors, enabling personal relationship in the exchange of vegetables, fruit, meat, baked goods, herbs, natural cleaning products and other locally produced food, garden and household products straight from the producer to the consumer.

The IWFM supports family farms, encourages sustainable farmland preservation and urban agriculture, delivers seasonal & local product to Indianapolis residents, and raises awareness of social & environmental considerations related to food. The IWFM encourages local entrepreneurship, a growing food culture, social & environmental consciousness, and educational exchange toward the improvement of quality-of-life & quality-of-experience for Indianapolis residents & visitors.

Cube and roast 1 squash @ 400Farenheit
Let cool, and remove peel.
Roast also 1 onion, 6-8 carrots, and any other root vegetables at same temperature for about 30 minutes.

Combine squash and roasted veggies in food processor.
Add 1 can of coconut milk and one can of broth.
Add 1/2 teaspoon ginger, 1/2 teaspoon garam masala, 2 teaspoons cumin, 3 teaspoons curry powder, and juice of 1/2 lemon.
Process until smooth.

Reheat on low on stove top. When ready to eat, add a dollop of yogurt and some chopped herbs like cilantro or basil.
