Maria De Fonte found a love for baking while in high school. Fast forward a few years and she is baking in her own shop in Plainfield, IN.
Today Maria shares her famous Sweet Cornbread Muffin recipe just in time for Summer cookouts and picnic.
Maria’s Bakery 1826 E. Main St. Plainfield, IN – making Sweet Cornbread Muffins and Lemon Meringue Cake.
Sweet Cornbread Muffins
Makes 10 Muffins
Ingredients:
1/4 Cup Oil
3/4 cup white sugar
1/2 tsp.salt
1/2 tsp. vanilla
2 eggs
1/2 cup all-purpose flour
3/4 cup cornmeal
1TBSP baking powder
1/2 tsp baking soda
1/2 cup milk
Steps:
1) Preheat oven to 350 degrees
2) Combine oil, sugar, vanilla and salt. Mix thoroughly until creamy, Add eggs one at a time. Beat thoroughly Mix in cream of corn. Add flour cornmeal baking powder and baking soda. Add mile mixing until all flour is moistened.
Fill muffin cups right to the top.
Sprinkle with cheese
Bake for 30-35 minutes in a preheated oven and cook until done.
