Cilantro Marinade:
3 oz Cilantro, finely chopped
4oz Spanish diced onion
1oz chopped garlic
1 cup vegetable oil
1 tsp Meat Tenderizer
Procedure- in a blender combine cilantro, diced onion, chopped garlic, vegetable oil, and meat tenderizer. Blend until smooth.
Guajillo Paste:
1lb Guajili, cleaned and de-seeded
8 oz diced yellow onion
2oz chopped garlic
3 cups apple cider vinegar
Procedure- Place cleaned and de-sedded guajillio in very hot water. Simmer for 10 minutes After guajillos have cooked, combine onion, garlic and apple cider vinegar and guajillos with 2 cups of stock from the cooking of guajillos. Blended ingredients together.
Papas Bravas:
2 LB Idaho Potatoes, Diced 1X1, Cooked
1/2 OZ Chopped
3 oz Guajillo Paste
To Taste...salt & pepper
Procedure: In a bowl, combine potatoes, garlic, guajillo paste, salt, pepper. After mixing, place mixture onto metal sheet pan and cook for 15-20 minutes in a 350 degree oven.
