Morton's more than steaks!

Chef Ramon Gonzalez from Morton’s The Steakhouse show you how to create Braised Shorts Stroganoff Macaroni and Cheese your family will never forget.
 

Braised Shorts Stroganoff

1 Braised Beef Short Rib
4 ounces Braising liquid
9 ounces Papardelle pasta
4 TBL Butter, unsalted
2 TBL Parsley, chopped
Pepper, black, ground - to taste
1 TBL Sour cream
Sprinke - Chives, minced

1. Place the short rib and sauce in a pot of boiling water. Boil for approximately 10 minutes until the short ribs reach an internal temperature of 170 degrees.

2. Remove the short ribs from the water carefully and pour the sauce into a small saute pan. Set the sort rib aside and reserve hot.

3. Bring the sauce to a boil and reduce by aprroximately half. Add 2 TBL of butter to the sauce and whisk in. Add the short ribs to the sauce to coat. Check sauce for consistency and taste.

4. Re-heat pasta in simmering water and strain.

5. In seperate pan over medium heat, melt 2 TBL of butter, do not burn. Add the pasta and coat with the butter evenly. Add the parsley and toss together.

6. Mound the buttered noodles in the center of plate, ensuring to cover the whole plate.

7. Remove short rib from the sauce and place the rib, bone side down on the pasta.

8. Pour remaining sauce over the top of short rib.

9. Garnish with a dollop of sour cream on top of short rib and sprinkle with chopped chives.


Macaroni and Cheese

Cheese Sauce for Macaroni and Cheese

1 Ounce Clarified Butter
6 Ounces spanish onion
51/2 cups heavy cream
1 1/2 pounds of cheddar cheese
1 pound cream cheese
12 ounces parmesan cheese, kraft grated
4 ounces swiss cheese, shredded
2TBL chili paste

1. Place large pan on stove.
2. Add the butter and onion and sautee for about 3 minutes until soft.
3. Add the heavy cream and bring the cream to simmer.
4. Add cheddar and swiss cheese and all the cheeses to the cream and continually whisk until the cheese has melted and fully incorporated into the cream and the sauce returns to a simmer.
5. Add the chili paste to the cheese sauce and mix well.
6. Remove the sauce from the heat and blend in cheese and onions.

8 Ounces of Cavatappi Noodles
4TBL Smoked bacon bits
Cheese sauce for macaroni
11/4 ounces of cheddar cheese
2 TBL breadcrumbs, panko

Place the cooked noodles and bacon bits in a mixing bowl. Ladle the sauce over the noodles and mix well with a spatula. Place the noodles and sauce into a baking dish. Sprinkle cheese over the noodles. Sprinkle the panko breakcrumbs over top of noodles. Bake at 500 for approx 18 minutes.
