Rice Crusted Shrimp over late spring pea salad with a peanut sauce dressing

Recipe serves 4 people
12 shrimp 16/20 this is the size per pound
Bag rice flour
Bag of rice cakes pulsed in a food processor till crumbs
3 eggs
Splash of cream
Salt and pepper
4 cups of oil for frying

Clean the shrimp and then prepare them for breading. Set up three pans one with flour, eggs in another, and lastly the crumbled rice cakes. Run all the shrimp through the stations and then let them rest at room temperature while your oil heats in a pan to about 350 or use a deep fryer. Cook till golden brown and firm about 3 minutes

2 pounds of fresh peas like snow or snap, cut on a bias and trimmed of stems
