Check out Chef's recipe for roasted beets with Indiana goats cheese candied walnuts and apple cider gastric. Chef shows us how to properly roast beets and then how to peel and finally present the finished product
Gastric
2 c cider
2 c cider vinager
2 c sugar
Beets
Rub with oil and salt and pepper
Wrap in foul roast one hour or until tender
Candied walnut
2 c sugar
2 c water
2 c walnuts
Cook till syrup is golden and caramel. And then fry at 375 till floating
Garnish goat cheese with beets and walnuts drizzle with gastric and top w micro greens
