Two of the unique restaurants participating this year's TASTE OF INDIANAPOLIS stopped by the Indy Style kitchen to share some of the dishes that can be found at the event this year. 

The 1st Annual 2012 Taste of Indianapolis on the Canal is Saturday, July 7th 10am-8pm at the Admiral Raymond A. Spruance Basin next to the Creation Café & Euphoria Events. Admission is $5.

A variety of summer salads easy and quick: carrots spread salad with Charmoula, cinnamon brown sugar and lemon on pita, spinach salad with Charmoula and pan seared Ahi tuna salad with balsamic fresh basil dressing, spring salad, tomato, cucumbers, artichoke hearts, Kalamata Olives and capers,

Charmoula;

  • 2 bunch of Cilantro
  • 1 bunch of Parsley
  • 3 Oz liquid of Cumin
  • 2 Oz liquid of Paprika
  • 3 Oz Liquid of Garlic
  • 6 Oz of Red Wine Vinaigrette
  • 6 Oz of Extra Virgin Olive Oil
  • Pinch of Cayenne

Salt to taste, Blend ingredients until puree, Enjoy

Carrots Salads;

  • 3 Lb of carrots boiled in Water, blended with Charmoula
  • pinch of cinnamon
  • pinch of brown sugar and fresh squeezed lemon

Put the contents in the refrigerator to chill for 10 minutes, spread on pita and enjoy.

Spinach Salad

  • 1 Lb of Diced Fresh Spinach cooked to reduce, add Charmoula

Put the contents in the refrigerator to chill for 10 minutes, spread on pita and enjoy

Ahi Tuna Salad

Balsamic fresh basil dressing:

  • 1 Cup Balsamic Vinegar
  • 1 Cup Olive Oil
  • Salt to taste
  • 1 Oz Basil, Fresh

Combine all ingredients in a blender and mix until emulsified.

Toast spring salad, tomato, cucumbers, artichoke hearts, Kalamata Olives and capers with Balsamic Vinaigrette

Dressing, topped with marinated Ahi Tuna in puree garlic and Rass al hannout than finished with Charmoula.

Ras el hanout is a popular blend of herbs and spices that is used across the Middle East and North Africa. The name means "head of the shop" in Arabic, and refers to a mixture of the best spices a seller has to offer. While there is no definitive set combined spices, Chef Sentissi provides his own secret combination of over 12 herbs and spices.

K&T Special Sandwich recipe

  • 1 Fresh French roll or baguette

Spread:

  • Homemade butter (made with egg yolk, olive oil and spices
  • Pate’ (liver paste)

Meats: three pieces each

  • Pork belly meat- slow cooked
  • Steamed pork roll (equivalent of ham)
  • Vietnamese headcheese

Vegetables

  • Cucumber
  • Cilantro
  • Pickled carrots and daikon (radish)
  • Fresh Jalapenos

Toast in toaster oven on 350 degrees F for 5-7 minutes until crunchy, then drizzle secret sauce on sandwich (sauce is from the slow cooked pork belly meat.)

Then voila, bite and chew!

There’ll be something for everyone at the 2012 Taste of Indianapolis on the Canal. Join us on for this first year event on July 7 at the Canal in Downtown Indianapolis for an entire day full of fun, food and live entertainment.

“The Taste of Indianapolis will focus on local restaurants and musicians, all serving up the best Indianapolis has to offer while building community with food and family one bite at a time”, says event coordinator Jonathan Warren. Some of the restaurants highlighted will include; Garretts BBQ Smokehouse, Jamiacan Style Jerk, Fast Burrito, Grecian Garden, K & T Deli, Poccadio’s, Andrea’s BBQ and Seafood, The Amazing Potato Chip Company, A & M Bakery and much more.

The all day Concert on the Canal will include some of Indianapolis’s best local artist and exhibition performances from Jazz, Gospel, R & B, Reggae, to Latin Music. Performing will be the Gospel and R & B sensation Kendall Wyatt featuring the First Family label artist Keever West, Felicia Cook, Judah Band, Tommy and a Jazz Band. Also performing will be the recent winner of the Daddy Real Entertainments “Real Thing Music Competition”, one of Indy’s finest R&B solo artist, Deon Forever.
