Red Velvet Cupcake: Vanilla Bean
Ingredients:
2 ½ cups AP Flour
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 ½ cups granulated sugar
1 ½ cups vegetable oil
2 large eggs
1 ounce red food color
1 tsp vanilla
1 tsp vinegar
1 cup buttermilk
Procedure: Heat oven to 350 F. In a bowl sift all dry ingredients; flour, baking soda, salt and cocoa. Beat sugar and oil in mixer (use high speed) until well blended. Add eggs and beat until creamy- will be golden color. Next add dry ingredients and mix on medium until well blended- mixture will be thick. Add buttermilk, vinegar, vanilla, and mix until smooth. Once creamy add red food color. Batter will be creamy, should not be too loose.
Using a muffin /cupcake pan add cupcake liners to pan. Scoop batter in to liners, batter should be half way up side of cupcake liner. Bake for approximately 20-24 minutes- depending on oven.

Chocolate Ganache
Ingredients:
1 cup dark chocolate pieces
¾ cup heavy whipping cream
½ tsp almond extract
Procedure: In a medium saucepan heat whipping cream until slow boil. In a medium stainless bowl add chocolate; add hot cream and almond extract. Using a whisk combine ingredients until smooth. Set aside for a few minutes to allow to cool slightly.
