Valentine's Day treats

Pastry Chef Pete Schmutte from Cerulean Restaurant  demonstrates a variety of Valentine’s Day treats from Chocolate Pot du Crème to Warm Molten Chocolate. Plus Wendi Gallogly from Vintner Select tells you if your wine should be sweeter than the dessert.

Chocolate Pots De Crème
Serves: 4-6
Ingredients:
2/3 cups granulated sugar
8 egg yolks
2 1/4 cups heavy cream
1/4 cup semi sweet chocolate
3 tablespoons unsweetened chocolate

Method:
-Preheat oven to 350° F
- Put the heavy cream into a pot with half of the granulated sugar and bring to a simmer over medium high heat. As soon as the cream begins to simmer, remove from heat.
- Combine the remaining granulated sugar with the egg yolks in a bowl and stir together.
- While stirring the eggs with a whisk, stream the heated cream into the eggs. Mix completely.
- Add the chocolates to the mix and stir until melted.
-Pass the mix through a fine mesh strainer.
- Divide the mix evenly into ramekins or coffee cups.
- Put the cups into a bake proof dish.
- Pour water into the dish so it reaches halfway up the sides of the cups.
- Bake for 45 minutes to 1 hour.
- The custard will have a bit of jiggle when it is done but will continue to set as it cools.
- Remove from oven when baked and let cool in the refrigerator 2 hours before serving.

Molten Chocolate Cake
Serves: 6
Ingredients:
1 cup unsalted butter
1 1/3 cups bittersweet or semi-sweet chocolate chips
6 egg yolks
1 cup whole eggs
5/8 cup all purpose or cake flour
3/4 cup granulated sugar

Method:
- Preheat oven to 425°F
- Spray 6 ramekins or coffee cups with spray release (or brush with a thin layer of butter).
-Melt butter in the microwave in a microwave safe bowl.
- Add the chocolate to the butter and stir until smooth. (Microwave 10-15 additional seconds if need be to make the mixture smooth)
- Combine the egg yolk, whole egg and granulated sugar in a separate bowl. Stir until completely mixed.
- Stir the flour into the chocolate/butter mixture.
- Add the egg/sugar mixture to the chocolate. Stir to combine.
- Divide mix evenly into the prepared dishes.
- Bake in preheated oven for 14-15 minutes.
- Remove from oven and let stand at room temp for about 3-5 minutes.
- Turn cakes out onto serving plates. Serve and enjoy! 
These are great served with whipped cream or your favorite ice cream, berries, powdered sugar, or a caramel or chocolate sauce. The possibilities are endless!
