It's the best time of year to get citrus, and the ONLY time of year to get Meyer lemons, which is a cross between a lemon and and orange. These are sweeter and juicier than regular lemons, and are addicting. Once people discover Meyer lemons and see how different they are from a traditional lemon, they look forward to this time of year, anxious to get their hands on some.
Preserved Lemons:
This is a super-quick, low-maintenance trick. All that is required is some Meyer lemons, kosher salt, and jar. No canning required. Put everything together in the jar, let it cure for a couple of weeks, then use the lemons for months on end in a number of recipes. (salad dressings, risottos, etc.) And they're gorgeous to look at in the jar.
