Ingredients:
- 1/3 cup fresh lemon juice (Vitamin C)
- 2 tbs. olive oil (Antioxidant)
- ½ tsp. sea salt
- ½ tsp. black pepper
- ½ tsp. paprika
- ¼ tsp. pepper flakes
- ½ cup chopped walnuts or almonds
- 1 can red kidney beans, drained and rinsed (Protein)
- 1 can cannellini beans, drained and rinsed (Fiber)
- ¾ cup chopped red onion or scallion (anti-cancer)
- 12 oz. grape tomatoes cut in half (vitamin C)
- 1/2 cup chopped fresh parsley or Oregano
Directions:
- This one’s a no-brainer. Simply mix all ingredients together in a mixing bowl, refrigerate and serve.
- Serve with a salad of dark leafy greens, olive oil, garlic and mild vinegar.
