Chef Wendell: Mediterranean Bean Salad

Ingredients:

  • 1/3 cup fresh lemon juice (Vitamin C)
  • 2 tbs. olive oil (Antioxidant)
  • ½ tsp. sea salt
  • ½ tsp. black pepper
  • ½ tsp. paprika
  • ¼ tsp. pepper flakes
  • ½ cup chopped walnuts or almonds
  • 1 can red kidney beans, drained and rinsed (Protein)
  • 1 can cannellini beans, drained and rinsed (Fiber)
  • ¾ cup chopped red onion or scallion (anti-cancer)
  • 12 oz. grape tomatoes cut in half (vitamin C)
  • 1/2 cup chopped fresh parsley or Oregano

Directions:

  1. This one’s a no-brainer. Simply mix all ingredients together in a mixing bowl, refrigerate and serve.
  2. Serve with a salad of dark leafy greens, olive oil, garlic and mild vinegar.
