Chevre Cheese Crème Brulee Ingredients:
- ½ quart heavy cream brought to a boil with 2 oz sugar
- 6 egg yolks mixed with 2 oz sugar
- half of an 11 oz log chevre goat cheese
Half Diced Mango Fine Dice Brunoise Ingredients:
- 6 sweet ripe strawberries fine dice brunoise
- tbs. honey
- sea salt flakes
- 4 fresh basil leaves sliced thin chiffionaide
- splash grand marnier liqour or fruit liqour of choice
Directions:
- Add cheese to cream
- Add cup warm cream to egg yolks this tempers mix and prevents it breaking
- Add yolk mix to cream
- Pour into ramekins place in sheet tray
- Bake in 210 oven till set approx 1 hour it should be firm slight movement like set jello
- Chill till cold
- While chilling make salsa simply mix fruit with honey, liqour and ½ basil
- Sprinkle with sugar and carmelise with a torch
- To serve place a little salsa on the crème brulee and decorate with some basil and a sprinkle of sea salt flakes
