Get Cooking: Oven Roasted Cauliflower

Ingredients:

  • 1 head of cauliflower
  • ½ cup Extra Virgin Olive Oil
  • 2 tsp sea salt
  • 1 tsp cracked black pepper
  • Pink cayenne pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp ground coriander
  • 1/3 cup golden raisins
  • 1/3 cup dried red currants

Directions:

  1. Preheat oven to 370 degrees
  2. Split Cauliflower into fourths
  3. Rub Cauliflower with EVOO & all of the other seasoning
  4. Be sure to rub seasoning into the flesh evenly
  5. Place into large cast iron Dutch oven and sprinkle dried currants and raisins over the top drizzle with a little EVOO to moisten the fruit and place into oven
  6. Cook for 45 minutes or until the cauliflower is tender.
