Get Cooking: Texas Red Chili

INDIANAPOLIS (WISH) - Chef Lucas Trinosky’s

Ingredients:

  • 3 lb ground or diced beef, lean
  • 1 ea onion diced, medium size
  • 3 ea red chile peppers, minced
  • 30 oz whole peeled tomato, can pureed

First “dump” spices

  • 2 Tbs. chili powder
  • 1 tsp. cumin, ground
  • 1 tsp. oregano
  • 2 tsp. paprika
  • 1 tsp. cayenne pepper

Second “dump” spices

  • 2 tsp. chili powder
  • 1 tsp. cumin, ground
  • 2 tsp. coriander, ground

Final “dump” spices

  • 1 Tbs. Chili powder
  • 1 tsp. cumin
  • 1 tsp. oregano
  • 1 tsp. coriander
  • 3-4 Tbs. masa harina (corn flour)
  • ½ cup water to mix with corn four
  • ½ cup cilantro, chopped
     

Directions:

  1. Brown meat and drain grease
  2. Add onion and chili peppers cook 3-5 min
  3. Add tomatoes and first dump, simmer 25 minutes
  4. Add second dump continue to simmer 20 minutes
  5. Add final dump and masa/water mix and simmer 10 minutes
  6. Season with salt and black pepper; finish with cilantro
