Spinach & Artichoke Mac & Cheese
Ingredients: Spinach artichoke Mac & Cheese
Cavatappi Pasta (cooked) 1lb
Cheese sauce (see recipe) 2 cups
Spinach (fresh) 3oz
Garlic (minced) 1 tsp
Olive oil 1 tab
Salt & pepper to taste
Monterey Jack Cheese (shredded) ½ cup
Ingredients: Cheese Sauce
Heavy Cream 1 ½ cups
Cheddar Cheese 5oz
Jack Cheese 3oz
Fontina Cheese 3oz
Olive oil 3 tab
Flour (all purpose) 3 tab
Salt & Pepper to taste
Method: Cheese Sauce
In a med sauce pot over med high heat add the olive oil and flour. Cook for 8 to 10 minutes stirring constantly.
Add the heavy cream and whisk until flour mixture is combined. Reduce heat to medium and bring to a simmer.
Add the cheeses a little at a time while whisking.
Season with salt & pepper, taste and adjust seasonings if necessary
Method: Spinach artichoke Mac & Cheese
In a sauce pot over med heat add the olive oil and garlic and cook for 3 minutes.
Make sure to stir garlic so that it does not burn.
Add 2 oz of the spinach and cook for 2 more minutes.
Add the artichokes, cheese sauce and pasta. Stir to combine. Cook for 3 to 4 minutes until heated through.
Stir in the remaining spinach and pour into baking dish and top with jack cheese.
Bake for 10 minutes at 350 degrees
Big Bad Wolf Burger
Serves Four
(These four pigs went to market but never came home)
Ingredients:
Ground Pork 2lbs
Sliced Ham (thick cut) 4-2oz slices
Sliced Bacon (cooked) 12pcs
BBQ Pork 8oz
Cheddar Cheese 8 slices
Fried Onions 4oz
Hamburger Roll 4ea
Salt & Pepper to taste
Garlic (granulated) 1 tab
Butter Melted 2 tab
Method:
Season pork with garlic, salt and pepper and form into 8oz patties. Place on grill and cook until done approximately 5 minutes on each side depending on grill heat.
Place two pieces cheddar cheese on each patty. Hold in warm place while assembling remaining ingredients.
Place ham and bacon on grill for 1 minute to warm.
In a small pan heat up BBQ pork.
Brush roll with melted butter and toast
Place pork patty on bottom bun and top with BBQ pork then ham and bacon.
Top bacon with fried onions and the top bun. Serve immediately with your favorite side dish
