INDIANAPOLIS (WISH) - Here is an easy way to prepare your veggies.
Chef Wendell suggests to try humus or guacamole. "You’ll be adding extra nutritional pizzazz to your diet."
Marinated Vegetable Salad
You'll need:
3 cups broccoli florets
2 cups cauliflower florets
1/12 cups diced carrots
1 cucumber, diced
1/2 cup pitted Kalamata olives (reserve juice)
½ cup slivered Red Onion
1 Red Bell Pepper, diced
Dressing:
¾ cup olive oil
1/3 cup rice wine vinegar
1 tbs. Kalamata olive juice
3 cloves chopped fresh garlic
½ tsp. sea salt
½ tsp. black pepper
Directions:
• Wash all vegetables thoroughly.
• Leave the skin an all veggies then cut into equal size pieces for easy consumption.
• Combine dressing ingredients in a bowl and whisk well.
• Pour over the vegetable mixture and coat. Cover and refrigerate for 8 hours or overnight.
• Stir occasionally.
