Sweet Chipotle Bourbon Pork Tenderloin
Glaze Ingredients
1 cup Bourbon of choice
1 cup ketchup
1 cup dark brown sugar
2 glugs of molasses
1/4 cup mustard
1/4 cup red wine vinegar
1/4 cup apple cider vinegar
2 Tbs Worcestershire
2 tsp garlic powder
1 tsp Onion powder
1 tsp chipotle powder
Pinch mustard powder
Pinch paprika
1 Tbs butter
Salt and pepper to taste
Other ingredients
2-3 pork tenderloins
1 sweet onion, chopped
Tbs minced garlic
Glaze recipe:
Combine all ingredients in a pot to simmer and bring to a boil while stirring to keep from burning. Let cool.
Next sauté onions and garlic in a cast iron skillet until the onions become translucent. Next place tenderloins in the same skillet and sear on all sides. Next you pour 2/3 of your glaze over tenderloins. Now place in oven at 375 degrees for 30-40 minutes or until the tenderloins’ internal temperature is 150 degrees for medium (160 for well done). Once you plate the pork you can use the remaining 1/3 of the glaze to top the pork.

Walnut sweet tooth snack:
Place walnuts in a bowl. Chop your favorite apple into cubes and place in the bowl. Sprinkle cinnamon and honey over the top and mix. Or you can substitute banana for the apple.
Sweet Apple Slaw:
Ingredients
1 head green cabbage, chopped, cut or peeled, (like with a potato peeler).
I red onion, diced
2 apples, diced
2-3 carrots, shredded or chopped
Stevia to taste
Salt and pepper to taste
2-3 glugs canola, vegetable or olive oil
1-2 glugs apple cider vinegar
1-2 glugs red wine vinegar (optional)
Mix cabbage, carrot, apple, and onion in large salad bowl. Add salt, pepper, and stevia to taste. Add oil and then vinegar- with not as much oil as vinegar. Repeat to taste, but don’t drench. Mix and enjoy.
