Breakfast pizzas. These are not only great for breakfast but make great “breakfast-for-dinner ideas!”

Firefighter Tim shared two recipes Friday morning. One is made with a biscuit crust and topped with scrambled eggs, sausage, bacon, green peppers. The second is a healthier breakfast pizza made on a very thin crust topped with an avocado spread wild cherry tomatoes and a fried egg.

Oh, and don’t forget about the granola-topped crust with Greek yogurt and fruit!

Granola Pizza

Ingredients:
2 and 1/2 cups granola
1/2 cup natural peanut butter
1 tbls honey
1-1/2 cups Greek yogurt
Fruit of your choice for toppings (berries, bananas, walnuts, almonds)

Recipe:
Mix granola, peanut butter and honey in a bowl. Flatten into pie pan or onto pizza dish. Bake in oven at 325 degrees for 10 minutes. Chill in fridge for one hour. Remove from fridge and cover granola ins Greek yogurt. Top with various fruit and nuts.

Biscuit and Egg Breakfast Pizza

Ingredients:
1 can of breakfast biscuits or 1 batch (rolled but uncut) of your favorite breakfast biscuits from scratch.  
7 eggs
1 cup cooked ground breakfast sausage
1/2 cup diced, cooked bacon
1 large bell pepper, diced
1 small onion, diced
1/2 cup shredded cheese
And any other topping you enjoy on your eggs

Recipe:
Knead biscuits into large ball. Roll into a pizza crust. Bake dough in oven at 325 degrees for 13-18 minutes. While dough is cooking, scramble eggs. While eggs are still a little runny, pull out the crust and top it with the eggs, sausage, bacon, pepper, onion and cheese (and any other toppings you prefer). Return pizza and toppings to oven until biscuits are cooked through. Remove from oven; slice and enjoy.

Avocado Thin Crust Breakfast Pizza

Ingredients:
1 thin-crust pizza crust — pre-made or made in advance
1 avocado
Salt to taste
Pepper to taste
Adobo seasoning to taste
Cilantro to taste and/or basil to taste
Parsley to taste
Wild cherry tomatoes
2 eggs, sunny side up

Recipe:
Roll out thin crust – very thin – on pizza plate. Pan fry crust until it bubbles on each side.  Return crust to pizza tray.  Mash Avocado and add salt, pepper, and adobo to taste. Mix together. Spread crust with avocado mixture. Quarter cherry tomatoes and spread on top of the avocado mixture. Lay eggs on top. Garnish with salt, pepper, parsley and cilantro or basil. Enjoy!
