With 5 more minutes to snooze, 4 meals to prepare, only 3 eggs left, 2 kids to wake up and 1 me, breakfast can definitely be a challenge. With so many grab and go meals available, it’s easy to sacrifice taste in a race against the clock but breakfast is the most important meal of the day!
One huge time-saver, is to prepare your meal the night before!
RICHARD BLAIS RAW OATMEAL RISOTTO RECIPE
“Raw Oatmeal Risotto" and it is packed with fiber. You will need the following:
3 cups raw steel cut oats, divided in half
1/2 cup finely ground raw almonds
4 cups coconut milk or almond milk
3 cups water
1/4 cup agave nectar, amber
1/4 cup chopped Medjool dates
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon sea salt
And 2 teaspoons of Benefiber -Benefiber is a great way to sneak in some extra fiber into one of the most important meals of the day. I love that it doesn’t alter the taste or texture of my food.
Okay, we will start by grinding (or blending) half the oats.
We will then combine remaining oats with all ingredients including Benefiber and let it sit overnight. See, told you this is easy!
After a full night’s sleep, give it another good mix and feel free to add in a little water or milk if the texture is too thick.
Now for the best part…garnishing with your favorite toppings! The options are limitless but I’ve used chopped walnuts, sliced banana, goji berries, raisins, hemp seeds, you name it! But my personal favorites are fresh pomegranate seeds and cacao nibs.
And there you have it, a healthy breakfast in under 5 min!
