Dish: Striped Bass, linguinette, nettle pesto, king trumpet mushroom, fava bean
First 5 minute set:
prep veg and pasta
-2c tightly packed and blanched nettles*
-1 1/3c extra virgin olive oil
-1 clove garlic
-1/4c toasted pine nuts
-1/4 tsp chili flake
-1 tbsp kosher salt
-blend above ingredients in food processor until desired texture.
*blanch the nettles in boiling salted water, then shock in an ice bath. squeeze as much liquid out of the nettles as possible (if you still feel a touch of a sting then blanch a bit longer).
Second 5 minute set:
cook striped bass
noodles (from water, noodle recipe)
