White Clam Sauce
¼ Cup Extra Virgin Olive Oil
¼ Tablespoon Crushed Red Pepper Flakes
1 Tablespoon Minced Garlic
3 Anchovy Fillets
1 Sprig Fresh Thyme
¾ Cup White Wine
¾ Cup Clam Stock
1 Cups Chopped Clams
Zest of 1 Lemon
¼ Bunch Chopped Parsley
Salt & Pepper
Heat oil. Add pepper flakes, garlic, and anchovies. Cook until anchovies dissolve into oil. Add thyme and wine and reduce by one third. Add stock. Stir in clams, zest and parsley. Cook for 7 minutes.
