Duck Confit Hash
2 tablespoons duck fat
1 diced yellow onion
8 small Yukon gold potatoes, diced
2 whole sweet potatoes, peeled and diced
Salt and pepper
Shredded meat from 2 legs duck confit (recipe follows)
1 tablespoon butter
Melt duck fat, sauté onions and potatoes in fat. Stir while cooking for first 2-3 minutes, then leave the pan alone and let a crust form on the bottom. Stir once more, then transfer to 375 degree oven to finish cooking.
Meanwhile, reheat duck confit.
Melt butter in a non-stick pan for eggs, then add two at a time and fry to desired doneness.
Plate duck confit hash by making a bed with the potato hash, top with duck, then eggs.
I like to serve this with a lightly dressed arugula salad to cut the richness of the rest of the dish.
Crabby Eggs Florentine
4 whole English muffins
1lb fresh baby spinach
8 one ounce crab cakes
2 C Mornay sauce (recipe follows)
Reheat sauce if necessary.
Toast English muffins.
Sauté spinach until wilted.
Pan fry crab cakes.
Poach eggs by bringing water to a simmer in a pan with a splash of white vinegar, then drop in eggs 2 at a time and poach until desired doneness.
Assemble Crabby Eggs by topping the toasted English muffin halves with spinach, crab cakes, poached egg, and then sauce.
2 ½ tablespoons butter
3 tablespoons flour
2 cups of warmed milk
Salt and pepper
Pinch of nutmeg
1 cup grated gruyere cheese
Melt butter, then add flour to create a roux. Cook for one to two minutes while stirring.
Whisk in warmed milk until sauce thickens and comes to a boil. Add seasonings and simmer for 2 to 3 minutes, then turn off heat and stir in cheese until melted.
