PACERS PLAY-OFF BBQ CHICKEN PIZZA RECIPE
2 boneless, skinless chicken breasts
sea salt, to taste
pepper, to taste
1 cup BBQ sauce, divided
1 large ready-made pizza crust
2 cups mozzarella or smoked Gouda cheese, grated
1 cup pineapple chunks
½ cup fresh cilantro, chopped
1. Preheat oven to 400 degrees. Season chicken with salt & pepper, then generously brush on BBQ sauce. Bake chicken in a pan for 25 minutes. Let chicken cool then chop into small pieces.
2. Lay pizza crust on baking sheet. Spoon BBQ sauce onto crust then spread it over the top leaving a ½-inch border around the edges. Sprinkle cheese over crust. Next, sprinkle chicken, pineapple & cilantro evenly over pizza.
3. Bake pizza for 10 minutes or until cheese has melted. Transfer pizza to a cutting board. Cut into wedges & serve hot.
