In this cooking segment featuring Annessa Chumbley, a registered dietitian, and nutritionist, two delicious recipes are showcased: Cheeseburger Kabobs with Dill Pickle Sauce and Mimi’s Famous Baked Beans.
The first recipe, Cheeseburger Kabobs, starts with grass-fed ground beef mixed with dried onion, garlic powder, salt, and Worcestershire sauce. The meat is formed into balls and grilled until seared on both sides. After sprinkling Worcestershire sauce over the meatballs, they are left to rest. The most delicious sauce ever is prepared by combining light mayonnaise, plain Greek yogurt, dill pickle juice, yellow mustard, and celery seed.
To assemble the kabobs, a meatball is skewered, followed by a pickle, cheese cube, tomato, another pickle, cheese cube, tomato, and a second meatball. The kabobs are served immediately with the sauce.
Pro tips for the Cheeseburger Kabobs include fully searing the meatballs on the grill before flipping them and making the sauce in advance for enhanced flavors.
The second recipe, Mimi’s Famous Baked Beans, is a family favorite that receives numerous requests. It calls for large and small cans of Van Camp’s pork and beans, dark brown sugar, ketchup, sweet onions, and bacon.
The beans are poured into a baking dish, excess juice is drained, brown sugar is crumbled over the beans, and ketchup is generously added and gently mixed. The onions, quartered, are placed on top of the beans, and strips of raw bacon are laid across them. Additional brown sugar is crumbled over each onion. The dish is baked until bubbly, the bacon is cooked, and the onions are tender.
Mimi’s Famous Baked Beans can be baked at 350 to 400 degrees Fahrenheit, depending on the desired cooking time.

One of the key aspects of her health that she focuses on is kidney health, particularly in relation to lupus nephritis, a serious complication of lupus that can lead to kidney damage or failure.
Now, Braxton is using her platform to empower individuals with lupus and lupus nephritis to prioritize their kidney health by regularly visiting their doctors for routine testing.
Braxton is part of the Get Uncomfortable campaign (www.getuncomfortable.com), which aims to educate and empower those with lupus nephritis, especially women of color who are disproportionately affected.
The campaign emphasizes the importance of making kidney health a top priority. Individuals with lupus nephritis face a threefold higher risk of death compared to those with lupus but without kidney involvement.
Braxton acknowledges that routine testing, such as urine analysis and blood work, can be uncomfortable however, she emphasizes that these discomforts are minor compared to the potential consequences of kidney failure or the need for dialysis.
By undergoing regular tests and staying proactive about kidney health, individuals with lupus nephritis can reduce the risk of serious complications.
Lupus nephritis is a common manifestation of lupus, affecting around one-third of individuals diagnosed with systemic lupus erythematosus (SLE). It can lead to irreversible kidney damage and complications like heart attacks or strokes.
The risk of death is significantly higher for those with lupus nephritis compared to those without kidney involvement. Disparities exist, with Black, Asian, Hispanic, and Native American individuals having a higher likelihood of developing lupus nephritis and experiencing poorer outcomes.

Microchips provide a unique means of identification for pets. It’s estimated that over 10 million dogs and cats are lost or stolen in the U.S. every year, and one in three pets will become lost at some point.
Microchips, which are rice-sized radio identification devices, offer a permanent and distinctive form of identification for dogs, cats, and many other animals.
According to the American Veterinary Medical Association (AVMA), microchipped dogs have a much higher chance of being reunited with their owners compared to those without microchips.
In the UK, where microchipping has been mandatory for the last five years, return rates are significantly higher.
Unlike collars and tags that can be easily removed, microchips are implanted under the pet’s skin and can’t be lost.
No significant issues have been reported regarding microchipping. There have been extremely rare and unsubstantiated reports of cancer development, but overall, microchipping is considered safe for pets.
It’s important to note that no identification system is 100% foolproof, but when microchips are implanted correctly, registered properly, and the database is kept up to date, they significantly increase the odds of reuniting lost pets with their owners.
Most veterinary offices and animal shelters have microchip scanners. By bringing the found pet to one of these places, they can scan for a microchip. This quick process can help reunite pets with their families.
The American Animal Hospital Association (AAHA) has a universal lookup tool at https://petmicrochiplookup.org/ that can assist in identifying the correct database associated with the microchip.
Posting the found pet on dedicated websites like IndyLostPets can be incredibly helpful in reuniting families.
