Bacon and Pimento Cheese Breakfast Sandwich with 4 Birds Bakery

Pimento Cheese Spread
Ingredients
8 ounces extra-sharp cheddar cheese, grated
¼ cup softened cream cheese
1/2 cup jarred pimento or other roasted red peppers, finely diced
3 tablespoons mayonnaise
½ teaspoon dried red chile flakes, optional
2 cloves fresh garlic, chopped finely, or to taste
Salt and freshly ground black pepper to taste
Directions:
In a large mixing bowl, combine all ingredients until evenly combined.
Transfer the pimento cheese to a plastic container or bowl, cover tightly, and store in the refrigerator. Pimento cheese keeps in the refrigerator for 1 week.

Classic Pie Crust
Ingredients
1/2 cup unsalted butter diced and chilled
1 1/4 cups all purpose flour
1/2 teaspoon salt
3 – 4 tablespoons ice water

Directions
Before beginning, make sure that your butter and water are very cold. This helps create flaky layers.
Combine flour and salt in a food processor. Pulse once to mix.
Add butter and process until it resembles wet sand. Add 1 tablespoon of water and pulse, a few times. Continue to add water and pulse until the dough forms a ball. This takes a few seconds. If you find your mixture is too dry, you can add another tablespoon of water. (It is easier to add more water than more flour). If your dough is too wet, remove from the food processor and work in a little more flour on your table.
On a floured surface, turn the dough out and press the dough ball into a disk and roll to about 1/4″ thickness. If it sticks to the rolling pin, add more flour. Be sure to flip and rotate your dough as you go so it does not stick to your surface.

Roll out the dough to a few inches larger than your pie plate (about 12″ for a 9″ pie plate).
Place in a greased pie plate and press to fit. Tuck any overhang and crimp to decorate the edges. Chill until ready to fill.
