In our kitchen today, Fishers’ Test Kitchen’s Jolene Ketzenberger shares an EASY Chocolate Cake Recipe– no eggs, no butter! Her mom even called it “Wacky Cake!” After the deliciousness, Jolene also shares the latest restaurant news!
Makes 9 pieces
1 ½ cups all-purpose flour
1 scant cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon cinnamon (optional)
½ teaspoon salt
2 teaspoons vanilla extract
1 tablespoon vinegar
1/3 cup vegetable oil
1 cup water (or use 1/2 cup water plus 1/2 cup cold coffee)
1/3 cup chocolate chips (optional)
Preheat oven to 350 degrees. Lightly grease an 8-by-8-inch baking pan.
Whisk together flour, sugar, cocoa, baking soda, cinnamon if using and salt in a mixing bowl.
Add oil, vinegar and vanilla to dry ingredients; pour water over all, and stir well with fork just until completely mixed. Stir in chocolate chips if using.
Pour batter into prepared pan and bake at 350 degrees 30 to 40 minutes, or until tooth pick inserted comes out clean. When cool, frost if desired, sprinkle with powdered sugar or leave plain.
