Roasted Rice Cakes (yields 8)

2/3 cup cooked rice

1 cup Italian cheese, shredded

2 large eggs, beaten

8 oz. cremini mushrooms, sliced

1/3 cup chives, snipped

1 bell pepper, roasted and diced 

grapeseed oil

sea salt

*Special Equipment: muffin tin, wire rack, blender

Preheat oven to 400 degrees Fahrenheit.

Set a small skillet over medium-high heat. Add 2 tablespoons grapeseed oil and mushrooms. Sprinkle with sea salt. Cover with a lid and cook 4 to 6 minutes. At the half point, stir mushrooms. Return the lid, allowing the mushrooms to continue cooking.

Remove mushrooms from skillet and transfer to a plate to cool.

Combine rice, beaten eggs, cheese, bell pepper, chives and mushrooms.

Lightly coat muffin cavities with oil and fill with mixture. Place in oven to bake 15 minutes. If extra browning is desired, turn oven to broiler setting and cook and additional 3 to 5 minutes.

Roasted Strawberry Vinaigrette (yields 14 oz.)

1 pint fresh strawberries, washed and hulled

1 tablespoon sugar

1/3 cup plus 2 tablespoons white balsamic vinegar

4 tablespoons extra virgin olive oil

Preheat oven to 475 degrees Fahrenheit.

Place strawberries in a small bowl. Sprinkle with sugar and stir. Line a baking pan with parchment paper. Position a wire rack on top and arrange strawberries on rack with the tips pointing up.

Bake strawberries 15 to 20 minutes. Remove from oven and transfer to a bowl to cool. Once cooled, add strawberries, strawberry juice, balsamic vinegar and oil to a blender, processing until smooth and creamy. Season with sea salt.

Drizzle dressing over your favorite greens and enjoy.

Easy Solution: If you don’t have mushrooms on hand, use oven roasted tomatoes or even corn in your rice cakes.
