on the beach in Jamaica , Chef Amy will be preparing Sweet Fried Plantains
– one of
her
many specialities!
RECIPES

FRIED PLANTAINS
SWEET
FRIED PLANTAINS
2-3
very ripe plantains peeled and sliced
1/4
cup cold butter divided into 4 cubes
PREP
TIME: 5 min COOK TIME: 10 min TOTAL TIME: 15 min
◈ Heat a large skillet over
medium heat, then add 1 cube of cold butter.
◈ When the butter starts to
melt add the plantains – be sure to not crowd the pan.
◈ Add another cube of butter,
and let the plantains fry in the butter for about 3
minutes,
or until they are golden.
◈ When the plantains are
golden, flip them using a pair of tongs so they can fry
on
the other side and add another cube of cold butter and fry.
◈ Add the last bit of butter
and let the plantains fry until they are golden and
nicely
caramelized.
◈ When the plantains are
golden, remove them from the pan using a pair of
tongs,
and place them on a plate lined with paper towels to cool.
◈ Serve and Enjoy!

TIP:
To make fried sweet plantains, the plantains need to be very ripe,
meaning
mostly
black like in the image below. If they are still green, or just yellow, the
plantains
will not be sweet after you fry them. You’ll need to wait for the
green/yellow
plantains to ripen, or turn black, sitting on your counter several days
before
you can make sweet plantains.
UPDATE
Like
the entire hospitality industry, A Cut Above suffered significantly as a result
of COVID –
19,
with a loss of $750,000. in booked events, not to mention an 85% decrease in
projected
revenue
for the rest of 2020. But, true to form, Chef Amy has risen to the occasion,
leading
the
cause to Feed the Frontliners with Carmel Cares at local hospitals and health
care
facilities,
while assisting other local small businesses through the pandemic and guiding
numerous
brave couples who are still moving forward with plans for their wedding day!
This
past
week, thanks to the Paycheck Protection Program (PPP) offered by the CARES Act
and
through
the leadership of Governor Holcomb’s Back on Track Indiana Plan, A Cut Above
was
able to bring back its entire staff who had been furloughed in order to begin
the process
of
rebuilding. Fully compliant with all COVID-19 recommendations, A Cut Above is
optimistic about leading the way to a “new normal”.
