Christmas Eve: A Very Indy Style Christmas Morning

Drizzley. Gooey. And just plain GOOD! If you're having family over to your house Christmas morning, here's a "Christmas-on-a-plate" recipe from Registered Dietitian Annessa Chumbley... AND it's good for you! 

Gingerbread Pancakes with Apple Pie Topping and Drizzled Caramel Sauce 
- Gingerbread Pancakes are made with almond flour, so they are good for anyone with gluten-intolerance or anyone wanting to eat lower-carb and staying away from regular flour.  These pancakes are also higher in protein and very filling, with the yummy taste of homemade gingerbread in every bite. Seared Lucy-Glo Apples go on top. 
- Homemade Caramel Sauce is made dairy-free, using only a can of coconut milk!  Combine it with raw honey, pure maple syrup, a pinch of salt, and let that cook until reduced by half.  Add a splash of vanilla extract and a drop of butter extract, and you have an irresistible caramel sauce!!!  Store in the refrigerator.
