It’s a dish named after his wrestling coach, and now Firefighter Tim is sharing it with us. (plus, a few more recipes, too!) Here you go:
Kielbasa Onions Potatoes and Peppers (KOPP) (named after my wrestling coach Bob Kopnisky Coach Kop)
Tablespoon olive oil
Tablespoon minced garlic
Two grilled of seared Polish kielbasas
Tablespoon Hungarian Paprika
Seasoning salt to taste
Pepper to taste
Chili powder to taste
Creole seasoning to taste
Fry potatoes in pan with olive oil. Once they begin to soften, add onion and pepper. Add dry seasonings and mix together. Sear or grill kielbasa separately. Dice the kielbasa. Cook together in pan for 5-10 minutes. Enjoy.
Mears Mash-up for breakfast (a favorite from our recent vacation)
1/2 cup milk
1/2cup Shredded cheese
Scramble eggs and milk. Reheat leftover KOPP. Pour scrambled eggs into leftover KOPP. Scramble together. Sprinkle with cheese. Enjoy.
8 cubes of frozen coffee
3 regular ice cubes
1 packet stevia
1/3 cup oats
Handful dark chocolate chips
Container of premier protein, cafè latte flavored or chocolate flavored
Blend all ingredients in blender and enjoy.
