Firefighter Tim shares some “Wake Up Wednesday” egg recipes to enjoy breakfast food at any time of day! 
Egg in a Hole

Ingredients:
Bread 
Egg 
Butter 

Recipe: 
Butter both sides of bread.  Then use a shot glass or small 1 inch diameter circular cookie cutter to cut hole in center of the bread.  Place bread in a frying pan and crack egg into center of the hole.  Flip the bread and egg after a minute or two and cook other side.  Enjoy.  Make sure to fry up the center of bread that has been cut out (this was my favorite when my mom would do this).

Pan Sheet Egg Sandwiches

Ingredients:
10 eggs
1/2 cup milk 
2 crescent dough sheets ( or your favorite biscuit recipe) 
2.5 lbs of ground breakfast sausage 
1/2 onion 
1/2 cup chopped sweet peppers 
Salt and pepper to taste
Parchment paper 

Directions:
Roll and flatten sausage onto parchment paper.  Place on sheet pan and put into oven at 375 degrees for 17 minutes. Mix eggs in large bowl with milk, salt and pepper to taste.  Add diced peppers and onions (if you want you can sauté these first).  Pour onto a new piece of parchment paper that has been placed on a sheet pan. Cook at 425 degrees for 10 minutes. Place dough onto a new sheet of parchment paper on a sheet pan.  Cook for 10 to 12 minutes at 375 degrees. Stack layers of croissant, sausage and egg (and cheese if wanted).  Top with another baked croissant or leave open face.  Cut into small squares.  These are great to keep frozen for before school or that late last-minute “wake up Wednesday” dinner.

Cupcake Dish Poached Egg Sandwiches 

Ingredients: 
Cupcake pan 
Eggs 
1 Tbs. water per egg 
Salt and pepper to taste
Non stick spray 

All options from here on out: 
Choice of bread ( English muffins, thin bagels ) 
Ham 
Bacon 
Sliced cheese 

Directions: 
Spay cupcake pan, and crack desired number of eggs into pan – one egg per cupcake holder.  Add 1 Tbs. of water to each egg.  Salt and pepper to taste and bake at 350 degrees for 12-15 minutes. Now pull out eggs and place on desired bread, ie. thin toasts bagel or whole wheat English muffin.  Add ham, bacon, cheese, or all three as desired. These are another great item that you can make and freeze for later.
