Firefighter Tim shares Taco Tuesday recipes

In our kitchen today, Firefighter Tim shares some Tuesday Taco recipes that are sure to please! 

Easy Shredded Beef Tacos
Ingredients:
Boneless Choice Chuck roast
Onion, diced 
Tbs Taco seasoning 
2 tsp garlic powder 
1 tsp chili powder 
1 tsp paprika 
1 tsp chipotle powder 
Salt and pepper to taste 
Enchilada sauce 
Salsa of choice 

Directions: 
Dry rub roast with all dry seasonings. 
Sauté onions. Once onion has started to become translucent, place roast on top and begin to sear all sides. Next place roast and onions in slow cooker. Pour 1/4 cup enchilada sauce on top along with a couple spoonfuls of salsa. Cook on low for 4 to 6 hours. The meat will be so tender you can shred it with a spoon.

Lime cilantro slaw
Ingredients:

Shredded cabbage and a red onion (or bag of already shredded slaw) 
Handful cilantro, chopped 
Tbs Olive oil 
Juice of 1 or 2 Limes
Package stevia 
Salt and pepper 

Directions:
Place shredded cabbage, onion, and cilantro into a bowl. Next mix in olive oil, lime juice, salt, pepper, and stevia. Enjoy.

Shrimp Tacos with Greek Yogurt Guacamole

Ingredients: 
1lb of shrimp 
2tsp Chili powder 
1tsp Chipotle powder 
1tsp paprika
Lime juice 
Salt and Pepper to taste 
1/2 tsp Adobo powder 

Directions for shrimp:
Coat shrimp with dry ingredients and squeeze lime juice on top. Then place into a skillet and sauté until fully cooked.

Greek Yogurt Guacamole sauce 
Ingredients:
2 avocados
1/2 cup Greek Yogurt
Juice of 1 Lime
Cilantro 
Salt and pepper 

Directions: 
Mash avocados and mix with Greek Yogurt. Add all other ingredients and mix well. 

Build your shrimp tacos:
Place tbs of Greek Yogurt guacamole on corn tortillas, then add some of the lime cilantro slaw. Next, place the shrimp and top with Pico de Gallo and a little cheese.
