Firefighter Tim’s simple breakfast recipes

Are you tired of having the same thing for breakfast day after day? Well, this morning Firefighter Tim shared some fun ways to spice up your first meal of the day!

Loaded Potato Cakes and eggs

Ingredients:

  • Left over mashed potatoes
  • ½ onion, diced
  • 1 tablespoon garlic powder
  • 1 tablespoon diced chives
  • Salt and pepper to taste
  • 1 egg
  • ¾ cup flour

Directions:

Sauté the onion.  Add to mashed potatoes, deiced chives, salt, pepper.  Beat egg into flour and mix all ingredients together.  Make contents into balls.  Then sear them flat in a pan.  Garnish with an egg, bacon or sausage, and chives and enjoy.  

Sweet Potato Hash Browns egg in a whole 

Ingredients:

  • Two Sweet potatoes
  • ½ onion, diced
  • Salt and pepper to taste
  • ½ tablespoon garlic powder
  • Smidge of paprika
  • 1 egg
  • 2 tablespoons flour
  • 6 additional eggs and bacon or sausage crumbles for garnish

Directions:

Shred the sweet potatoes with a grater.  Combine onion and sweet potato onto a towel and wring out their moisture.  Put into a bowl and add salt, pepper, paprika and garlic powder.  Beat egg into flour.  Combine flour and egg in bowl with other ingredients and mix.  Prepare portions of the mixture into patties.  Fry patties on both sides.  Use a cookie cutter or shot glass to cut a hole in the center of the patty after it is fried.  Crack and fry an egg in the center of the hole. Garnish with sausage or bacon crumbles and enjoy!

Avocado Egg in hole 

Ingredients:

  • 1 whole avocado
  • 3 eggs
  • Salt and pepper to taste
  • Smidge of paprika
  • Bacon or sausage crumbles

Directions:

Slice a whole avocado about ½ inch
thick.  Use a shot glass to widen the hole in the center.  Fry in a
pan.  Crack and egg in the hole as it is frying.  Salt and pepper and
sprinkle with paprika on each side as it fries.  Remove after egg is
fried.  Garnish with sausage or bacon and enjoy.
