Light summer salad recipes

Today, we learned how to keep it light and healthy for the summer with salad recipes from Jolene Ketzenberger of Eat Drink Indy.

Club Salad (Serves 4-6)

Ingredients:

  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise
  • 1 to 2 tablespoons sugar
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon garlic powder
  • 6 cups torn romaine or leaf lettuce
  • 4 cups cubed cooked turkey
  • 1-1/2 cups chopped tomatoes
  • 1-1/2 cups shredded part-skim mozzarella cheese
  • 1-1/2 cups shredded cheddar cheese
  • 10 bacon strips, cooked and crumbled
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cucumber

Directions:

In a large salad bowl, whisk the first 5 ingredients. Add the remaining ingredients; toss to coat.

Tortellini Salad (Serves 4)

Ingredients:

  • 1 pound fresh cheese tortellini
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 tablespoon honey
  • Kosher salt
  • Freshly ground black pepper
  • 3/4 cup chopped salami or prosciutto
  • 1 cup baby spinach
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 1/4 cup freshly grated Parmesan 
  • 1/4 cup sliced black olives, optional 

Directions:

In a large pot of salted boiling water, cook tortellini according to package directions. Drain and set aside.

To make dressing, in a large serving bowl whisk together olive oil, balsamic vinegar and honey and season with salt and pepper. Add the tortellini, salami, spinach and sun-dried tomatoes. Toss until well combined. Garnish with Parmesan and black olives.
