Easy-to-make summer salsas and salads
Love salsas? Basilmomma, AKA Heather Tallman, has some easy-to-make, delicious recipes to serve at your next summer gathering!Blueberry Corn Salsa
4 tsp olive oil
1 C fresh blanched sweet corn kernels
1 C fresh blueberries
1/4 C chopped sweet onion
2 TB chopped fresh cilantro
1/2 Medium jalapeno pepper
Juice of 1 lime
zest of 1 lime
Combine all ingredients and serve.

4-6 ripe peaches, pitted and diced
1 10 can Red Gold diced with green chilies, drained
1/4 C finely chopped red pepper
1/4 C finely chopped sweet onion
1 TB cilantro, chopped
zest and juice of 1 lime
1 Tb brown sugar
salt/pepper to taste
*This is mild, you want more heat then add 1 small jalapeno, diced.
Combine all and serve.Watermelon, Blueberry, Mint and Feta Salad
1/3 C prepared balsamic vinaigrette salad dressing
1/4 finely chopped sweet onion
8 C cubed seedless watermelon
2 C fresh blueberries
1/4 chopped fresh mint, loosely packed
4 oz crumbled feta cheese
In a large bowl add all ingredients, toss and serve.
If serving later, then add watermelon and dressing right before serving.
