FIRST SEGMENT: “Spicy Watermelon Mojito”
2 oz. Caribbean Rum
.75 oz. Dry Curacao
1 oz. Fresh Squeezed Watermelon Juice
.5 oz. Fresh Squeezed Lime Juice
3 Watermelon Chunks
5 Cucumber slices
2-3 Jalapeno slices, according to spice tolerance
3-4 Sprigs Fresh Mint
Add the fresh watermelon, cucumber and jalapeno slices to a mixing tin, and muddle thoroughly with the fresh squeezed lime juice. Add the fresh mint and tap lightly with the muddler to release the aromatics and flavor, for about 5-6 seconds, being careful not to overmuddle. Add ice, and the rest of the ingredients and shake vigorously for about 20 seconds until well chilled and emulsified. Double strain over ice into a large rocks or Collins glass. Add a splash of premium seltzer for effervescence. Garnish with a fresh watermelon-cucumber-jalapeno sword and mint. Enjoy!
SECOND SEGMENT: “Mezcali Sunset”
1 oz. Tequila Blanco
1 oz. Del Maguey Vida Mezcal
.75 oz. Aperol
1 oz. Smoked Habanero Honey Chipotle Syrup
.75 oz. Fresh Squeezed Lime Juice
1 oz. Pineapple Juice
2-3 Sprigs Fresh Mint
Add all of the ingredients and ice to a cocktail shaker. Slap the fresh mint to awaken the essential oils and aromatics, and add to the shaker. Shake vigorously for about 20 seconds. Double strain over ice into a Collins or large rocks glass. Garnish with fresh pineapple and pineapple leaves.
