Plan your Father’s Day lunch menu with these recipes

Whether you’re hitting the pool, going for a hike, or hanging out in your backyard this Father’s Day, Michelle Dudash, RDN, registered dietitian, chef and author of Clean Eating for Busy Families has a simple lunch spread that dad will love.

1. Tuna Salad or
Chicken Salad Sandwiches

It’s easy to whip up restaurant quality tuna or chicken
salad with the help of Michelle’s Dash

, containing dill, chives, and lemon. All you
need to add is tuna or chicken and mayo. Put the toppers on the side, like
tomato, lettuce, pickle, and avocado.

If dad is doing the
low-carb thing, put it over salad or pair with veggie sticks.

2. Pimento Cheese
Spread

Pair with crackers and veggie dippers.

3. Bloody Mary Bar

Offer Dad’s favorite toppers, like pickle spears, celery sticks, pickled asparagus, ground black pepper, horseradish, and fresh chopped dill.

Easy Pimento Cheese Recipe with Greek Yogurt Recipe

Once you start munching on pimento cheese, you can’t stop! Which is why I created this lightened up version, using Greek yogurt in place of cream cheese. You can use non-fat, low-fat, or whole-milk yogurt. You can easily stir this together by hand since its made with yogurt instead of cream cheese. This recipe makes about 1 1/2 cups.

Ingredients:

  • 1 (5.3 ounce) container plain Greek or Icelandic yogurt (about 1/2 cup + 1 tablespoon
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup mayonnaise
  • 1/4 cup diced jarred pimentos or roasted red pepper
  • 1/2 jalapeño, seeded and minced (about 2 tablespoons)
  • 1/8 teaspoon smoked paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon salt
  • Freshly ground black pepper

Directions:

Drain off the liquid from the top of the yogurt. If you have a fine strainer, gently scoop the yogurt into the strainer to further drain the liquid while you prep the other ingredients. Add all of the ingredients to a medium mixing bowl and stir. Enjoy right away or chill until ready to serve.

Serve with crackers and raw veggie sticks.
