Watercress Gingham Salad with Watercress from Grateful Greens located in Clarksville, Indiana

and topped with their famous house-made Gingham dressing (see recipe below).

Combine:

Watercress

Mandarin oranges

Red raspberries

Blue berries

Blue cheese dressing and crumbs

With Almonds on top

Mustard Crusted Pork Tenderloin with Pea Puree, Roasted Carrots, and Morel – Ramp Salpicon

The tenderloin is like the filet mignon of the pig…it is a lot more tender than the pork loin…and won’t be a dry.”

Season your tenderloin with salt and pepper and pan sear.

Brush with dijon mustard. This acts as a glue for the crust to stick

Roll in bread crumb and mustard seed mixture to coat on all sides.

Put the tenderloin on a pan and roast in the over until 130º internal temperature

Trim off the ends

Plate with sauted mushrooms and ramps.

RECIPE:

Gingham Dressing

Ingredients

½ shallot, minced

½ cup red wine vinegar

¼ cup sugar

¼ cup Dijon mustard

¼ cup water

2 cups salad oil

Salt and pepper to taste

Directions

1. Mix all ingredients except oil in a food processor until blended

2. Slowly drizzle in oil while processing

3. Season with salt and pepper
