The Produce Mom discusses hydroponic farming and lunch box recipes
The Produce Mom visited Indy Style today and brought along a few friends! We learned all about hydroponic farming and made a few easy recipes, including fish taco lettuce wraps and fruit pizza!

Fish Taco Wraps
INGREDIENTS
1 pkg Hydro Bibb Lettuce
Salsa
Guacamole
2 fish fillets, such as cod or tilapia
DIRECTIONS
1) Preheat grill to medium-high heat.
2) Brush the fish with olive oil & season with salt and pepper. Grill for 3-4 minutes per side, until just opaque in the center. Set aside to cool.
3) When slightly cool, chop into large chunks. Fold in salsa, being careful to not break up the fish chunks
4) Place in a bibb lettuce leaf, top with guacamole, wrap & serve.Blueberry Salsa

INGREDIENTS
2 pints blueberries
1 medium mango, diced
1 medium jicama, peeled & diced
1 small shallot, diced
1 red bell pepper, diced
Lemon juice, to taste
Cilantro, to taste
DIRECTIONS
Toss ingredients together in a large bowl. Serve with pita chips, over grilled meats & fish, on salads & more!Fruit Pizza

Crust =
1 roll pre-made sugar cookie dough, baked as a large rectangle or circle per directions on package
Frosting= mix together
1 cup plain or vanilla greek yogurt
1 cup almond butter
Honey or Maple Syrup, to taste
Topping =
Blueberries
Raspberries
Blackberries
Spread frosting over the cookie crust, top with fresh berries. Optional = drizzle with honey
