How to make Cheesy Stuffed Peppers
INDIANAPOLIS (WISH) — This recipe comes to us from viewer Lisa Lepper Doughty and it looks so good.
Cheesy Stuffed Peppers
Slice tops off 4-6 large green peppers and remove veins, set aside.
Remove stems, dice pepper tops, set aside. Tip: Gently slice off uneven nubs on the bottom (for balance).
Chop one small onion, set aside.
Brown 2 pounds ground beef, drain (I also love using ground chicken).
Then add chopped onions and green peppers, cook until tender.
Add rice (I used a 90-minute microwavable pouch of rice/quinoa).
Add about 1 cup curry ketchup (or tomato sauce).
Next, season to taste: Italian seasoning, kosher salt, garlic, pepper.
Fill peppers and place them in a baking dish. Top with excess filling, and then add a slice of Muenster cheese and shredded Parmesan on top.
Bake at 350 degrees until browned.
