INDIANAPOLIS (WISH) — “All Indiana” continues to take recipes from viewers that can be made while Hoosiers are under “stay at home” orders from Gov Eric Holcomb.
Potato Carrot Soup from Rachel Sourwine
5 medium potatoes
1 large sweet onion
4-5 cloves garlic
2 vegetable bouillon cubes
2 tsp basil
2 tsp oregano
1 teaspoon each, salt and pepper
5 cups boiling water
1. In a stock pot, add just enough oil to saute onion, carrots, and potatoes. Saute 5 minutes. Add garlic and saute one more minute.
2. Add bullion cubes and boiling water. Stir in seasonings and simmer soup about 20 minutes, or until vegetables are tender. Remove from heat for 5-10 minutes.
3. In batches, blend soup to desired consistency. Serve with garlic toast.
